fresh mango, diced |

cup red onion, chopped |

tablespoons fresh cilantro, chopped |

Juice of one lime |

tablespoons olive oil |

teaspoon salt |

Fresh ground black pepper to taste |
Step 1 |
In a bowl, combine all of the above ingredients. If the mango is firm, mash the chopped pieces a bit with a fork. |
Optional: 1 small Thai chili pepper or 1/2 jalapeno pepper, seeded and finely chopped.
Excellent served with fish, such as grilled tuna.
