Homemade bread doesn’t have to be difficult. Think focaccia! Focaccia is a flat bread that is similar to pizza, yet not quite the same. Olive oil, herbs and salt are popular toppings for this Italian specialty, but it’s easy to add other toppings you find appealing and that go well with bread. The beauty of focaccia is that the list of topping options is long and includes just about anything you find appealing.

  • 2 teaspoons quick-rising yeast
  • 1 cup warm water
  • 2 tablespoons sugar
  • 4 cups flour
  • 1 tablespoon coarse salt
  • 1/4 cup olive oil
  • cornmeal
  • 2 tablespoons olive oil
  • 1 green onion, minced
  • 1 garlic clove, sliced thin
  • 1-1/2 small tomatoes, diced
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon coarse salt
  • 1/2-1 teaspoons dried oregano

In a small bowl, combine the quick-rising yeast with warm water and sugar. Gently stir to dissolve. Allow the yeast mixture to stand until it gets a bit foamy.

Add the flour to a large bowl and make a well in its center.

In a separate small bowl, dissolve the first measure of coarse salt in a few tablespoons of water. Add this salt solution to the flour, along with the yeast mixture and the 1/4 cup olive oil.

Using your hands and a spatula to scrape the bowl, mix all ingredients together to form the dough. Knead the dough, adding a bit of flour as needed, until it is smooth, soft, and pliable. Form the dough into a round ball.

Lightly coat the dough ball with olive oil and leave it in the bowl. Cover the bowl with a thick towel and place it in a warm spot. Let the dough rise until it has doubled in size.

Coat a baking sheet with olive oil and sprinkle a few tablespoons of cornmeal evenly over the pan. Set aside.

Once the dough has risen, place it on a floured surface and punch it down 3-4 times. Allow it to stand while you prepare the toppings.

Roll and stretch the dough into an oblong shape, about 1/2 an inch thick. Place the dough on the oiled baking sheet, cover it with plastic wrap, and let it stand.

Preheat your oven to 400°F (200°C). After the dough has rested, poke small wells all around the dough using your finger. Brush the surface of the dough with olive oil (from the topping amount).

Evenly sprinkle on the dried oregano, green onion, diced tomatoes, and sliced garlic. Sprinkle with the topping coarse salt, then grated Parmesan cheese.

Bake on the bottom rack, checking it as it gets close to the end of the baking time.
