- 2 cup all purpose flour
- 3/4 cup brown sugar
- 1 tablespoon baking powder
- 0.5 teaspoon cinnamon(optional)
- 0.5 teaspoon vanilla extract(optional)
- 2 eggs
- 0.5 cup canola oil
- blueberries
- yogurt
Instructions
Step 1
Pre-heat oven to 400°F.
Step 2
Sift the flour, baking powder, cinnamon, and 1/2 cup brown sugar together in a bowl and make a well. Reserve the remaining brown sugar for topping.
Step 3
Stir in the wet ingredients: add the eggs, oil, vanilla, and yogurt. Stir with a wire whisk until just mixed; do not over-mix. Fold in the blueberries.
Step 4
Grease a muffin pan or use paper baking cases. Drop the batter into each case/mold, filling to about 2/3rds full. Sprinkle remaining brown sugar on top for a crispy sweet skin.
Step 5
Bake in a 400°F oven for about 15-20 minutes, until a toothpick inserted in the center comes out clean.

Cool on a wire rack for a few minutes and enjoy warm.
