Chicken marsala is an Italian dish made from chicken cutlets, mushrooms, and Marsala wine. The chicken is coated in flour, briefly sautéed, and then removed from the pan, which is then used to make a Marsala reduction sauce. The sauce is made by reducing the wine to nearly the consistency of a syrup while adding onions or shallots, as well as mushrooms, herbs and possibly other ingredients. The sauce is then poured over the chicken, which has been kept in a warming oven, and served immediately.''The New Best Recipe'' (2004). America's Test Kitchen. In an alternative method, the chicken breasts may be braised in a mixture of Marsala, butter, olive oil, mushrooms, and spices. The dish is commonly served with a side of potatoes or pasta.
When I have had Chicken Marsala in restaurants it has always contained mushrooms. I have also prepared it and I know I used mushrooms. I also believe that I dipped the chicken in a flour mixture with spices, not breadcrumbs.
I believe there is a typo in this recipe (Chicken Marsala).
The cooking steps do not mention neither the olive oil nor the cooking sherry. Perhaps you can substitute the olive oil for the butter and the cooking sherry for the marsala wine?

cup bread crumbs |

cup cooking sherry |
Step 1 |
Measure 1/2 cup Parmesan cheese to each cup of bread crumbs. Combine bread crumbs and cheese. |

Dip chicken in egg, then coat with breadcrumb mixture. |

Melt butter and oil in large skillet. Add chicken, cook on medium heat about 4 minutes on each side, or until chicken has light golden color. Remove to baking pan |
Step 5 |
Pour Marsala wine over chicken (about 1 cup to 4 breasts). |
Step 6 |
Bake covered at 350 degrees until done (about 30 minutes.) Don't overcook. |

The Marsala wine is a MUST!!! It will not taste right without it.
