- 4 breasts boneless chicken breasts sliced to desired size
- 1 egg egg
- 1/2 teaspoons salt
- 1/4 teaspoons pepper
- 1 cup bread crumbs
- 1/2 cup Parmesan cheese
- 4 tablespoons olive oil
- 4 tablespoons butter
- 1/2 cup Marsala wine
- 1/4 cup cooking sherry
Instructions
Step 1
Measure 1/2 cup Parmesan cheese for each cup of bread crumbs. Combine bread crumbs and cheese in a bowl.
Step 2
Beat eggs with salt and pepper in a separate bowl.
Step 3
Dip chicken in the egg mixture, then coat with the breadcrumb and cheese mixture.
Step 4
Melt butter and olive oil in a large skillet. Add the chicken and cook on medium heat for about 4 minutes per side, or until the chicken has a light golden color. Remove the cooked chicken to a baking pan.
Step 5
Pour Marsala wine over the chicken (using about 1 cup for 4 breasts, adjust based on desired sauce quantity).
Step 6
Bake covered at 350 degrees F until done (about 30 minutes). Do not overcook.
