I love these pancakes, there light, fluffy and bursting with blueberries and has a slight banana taste! Perfect low calorie breakfast to start your day off right!

  • 1 cup Blueberries, Fresh Or Frozen, Divided
  • 1 dash Salt
  • 1/2 teaspoons Sugar
  • 1/2 teaspoons Vanilla Extract
  • 1/2 teaspoons Baking Soda
  • 1/2 cups Greek Yogurt, Plain
  • 1/2 cups Banana, Mashed, Divided
  • 1/2 cups Egg Whites
  • 1/2 cups Whole Wheat Pastry Flour

Instructions

Step 1

Mix Greek yogurt, 1/4 cup mashed banana, egg whites, and vanilla extract in a small bowl.

In a separate bowl, combine flour, baking soda, sugar, and salt.

Combine the wet and dry ingredients and whisk until evenly mixed.

Fold in 1/2 cup of fresh blueberries into the batter.

Place 1/4 cup of batter onto a non-stick skillet. Cook on medium heat until bubbles start appearing through the top of the pancake, then flip. Flatten the batter with a spatula for more even cooking, if desired.

Continue cooking the pancake for about 1-2 minutes on each side.

For the blueberry sauce: In a sauce pan, add the remaining mashed banana and frozen blueberries and stir, mashing the blueberries as they cook.

Continue cooking the sauce until thick, about 5-7 minutes.

Pour the blueberry sauce over the pancakes.
