- 1/2 cup red onion
- 1/2 cup blue cheese
- 1/2 pound bacon
- Kosher salt
- Fresh ground black pepper
- 1/2 cup Balsamic vinegar
- 4 tablespoons Olive oil
- 3 head Romaine lettuce
Instructions
Step 1
Heat 1 tablespoon of olive oil in a pan and cook bacon and red onion until bacon is crispy. Remove the cooked bacon and onion from the pan. Add 1 more tablespoon of olive oil and the balsamic vinegar to the same pan and let the mixture reduce.
Step 2
Slice each head of romaine lettuce down the center.
Step 3
Brush both sides of the sliced lettuce with the remaining olive oil.
Step 4
Sprinkle the lettuce with salt and pepper.
Step 5
Place the seasoned lettuce halves on the grill.
Step 6
Grill lettuce on both sides until browned.
Step 7
Drizzle the grilled lettuce halves with the reduced balsamic dressing and sprinkle with blue cheese, bacon, and onion.
