  • 2 cup whole cashews
  • 1 cup brewed coffee (hot)
  • 1 cup sugar
  • 1 cup milk substitute
  • 1/2 cup cocoa powder
  • 1 teaspoon chocolate liquor or vodka
  • vegan caramel sauce

Mix together cashews, hot coffee, and sugar until sugar is completely dissolved. Add remaining ingredients and soak for 4 hours.

Blend mixture for a few minutes or until there are no chunks of cashew. Strain the liquid from the solid, being careful not to press the grounds through the strainer. Churn in an ice cream maker.

Fold in caramel sauce and freeze until firm. Serve in cone or dish.
