- 1 cup Raisins
- teaspoon Nutmeg
- teaspoon Cinnamon
- teaspoon Baking powder
- 1 teaspoon Salt
- 2 teaspoon Baking soda
- 3 cup Unbleached flour
- cup Crushed pineapple
- 2 cup Zucchini, coarsely shredded
- 2 teaspoon Vanilla
- 2 cup Brown sugar
- 1 cup Safflower oil
- 3 Eggs

Step 1
With an electric mixer, beat eggs. Add safflower oil, brown sugar and vanilla; continue beating mixture until foamy. With a spoon, stir in zucchini and crushed pineapple. In a separate bowl, combine unbleached flour, baking soda, salt, baking powder, cinnamon and nutmeg.

Add the combined dry ingredients to the zucchini and pineapple mixture. Stir until well-blended. Add raisins.

Pour the mixture into oiled 9 x 5-inch loaf pans. Bake at 350 degrees.

Cool at least 10 minutes before slicing.
