Finally it's that time of year when the sun shines bright, the beaches are full and the grills come out. Added to that the fireworks and the celebrations...yes ...

pounds lamb, cut in 1 ΒΌ" cubes |

tablespoons Fresh lemon juice |

tablespoon Hot chili oil (or |

tablespoon tsp cayenne and 1 tablespoon vegetable oil |

teaspoon Salt |

pinch sugar |
Step 1 |
Combine all ingredients and marinate lamb cubes for 2 hours in covered bowl. Drain lamb, reserving marinade for basting during barbecuing. Skewer lamb; you should have enough for two skewers per serving. Barbecue until browned, but still juicy. |
Overcooking will dull flavors.
