In a large pot, combine all ingredients except soy sauce and oil and bring to a boil over high heat.

Reduce heat and simmer, covered, for 20 minutes.

Add soy sauce and stir to coat chicken evenly. Simmer, covered, another 20 minutes until chicken is cooked through.

Transfer chicken to a plate. Pat pieces dry with paper towels.

10 to 15 minutes
Raise heat to medium-high and boil sauce until reduced to about 1 cup, about 10 to 15 minutes.
