Vegan Leek Soup

Ingredients

2 leeks, sliced on the bias, and separated
1 tablespoon olive oil
4 cups water
1 1/2 tablespoons Vogue Vege Base
1 teaspoon dried basil
1 teaspoon dried rosemary
1 teaspoon dried thyme
salt & pepper to taste

Preparation

Heat the oil on medium heat, Saute the leeks for about 5 minutes

Add the garlic, Saute about a minute more

Add the herbs, the Vege Base, and the s&p, give it a good stir, then add the water

Turn heat up to high, bring to a boil, then simmer for about 10 minutes.

My mom sent me a recipe for Leek Soup from her Wegman's Magazine...that simply gave me the idea, I then made it my own.
