Warm Macaroni and Barley Salad

- 1 box your favorite macaroni
- 3 stalks celery with leaves, chopped
- 1 chopped sweet onion
- 1 bunch scallions, chopped
- 6 cloves garlic, chopped
- 1/2 cup combination of dried cranberries and raisins
- 1 bunch large Italian parsley, chopped
- fresh ground black pepper, to taste
- sea salt, to taste
- 1 pouch instant barley
- olive oil for drizzling
- 2 lemons zest of lemons
- 2 lemons juice of lemons
- 3 tablespoons honey
- 1/2 cup olive oil
Instructions
Step 1
In a small bowl, combine the lemon zest, lemon juice, honey, and olive oil to prepare the dressing. Set aside.
Step 2
Cook the macaroni according to the package directions. Drain thoroughly and set aside.
Step 3
Prepare the instant barley as directed on the pouch. Drain thoroughly and set aside.
Step 4
In a large frying pan, drizzle a little olive oil and heat over medium heat. Add the chopped sweet onion, Italian parsley, garlic, and scallions. Sauté until the onion is clear, approximately 5-7 minutes.
Step 5
Add the cooked macaroni, prepared barley, and the dried cranberry and raisin combination to the frying pan with the sautéed vegetables. Toss gently to combine all ingredients.
Step 6
Pour the prepared dressing over the salad in the pan and toss again until all ingredients are evenly coated. Season with fresh ground black pepper and sea salt to taste. Serve warm or cold.
