  • 1 clove garlic, chopped
  • 1 large onion, halved and cut into 3 parts
  • 3 dried chillies, cut into 4 parts
  • 2 tablespoons oil
  • 1 tablespoon tomato sauce
  • 2 tablespoons sweet chilli sauce
  • 1 tablespoon thai chilli sauce
  • 1 teaspoon oyster sauce
  • 1 teaspoon sweet plum sauce
  • 3 drops sesame oil
  • 2 teaspoons sugar
  • 1 teaspoon cornflour
  • 4 breaded chicken fingers
  • 1 stalk spring onions, chopped

Step 1

Combine chopped garlic and onions in a bowl and set aside.

Heat 2 tablespoons of oil in a wok or skillet. Add the dried red chilies first, then after a few seconds, add the chopped garlic and sauté until aromatic.

Add the onions to the wok and continue to sauté.

After sautéing for a few more seconds, add all the sauce ingredients (tomato sauce, sweet chilli sauce, Thai chilli sauce, oyster sauce, sweet plum sauce, sesame oil, sugar, and cornflour). Let the sauce simmer for a few minutes until it thickens.

The sauce should be just enough to coat the chicken fingers, not like a gravy, to ensure the chicken remains crisp. Remove the sauce from heat.

Deep fry the breaded chicken fingers until golden brown and crisp.

Cut the deep-fried chicken fingers into 3 or 4 pieces each.

Add the cut chicken pieces and chopped spring onions to the sauce.

Stir the chicken pieces into the sauce until they are well coated. Serve immediately.
