Red Velvet Carrot Halwa

- 2 cup Carrots
- 5 Dates(optional)
- 5 teaspoons Desi ghee
- 3 cup Full cream milk
- 3/4 cup Jaggery powder(optional)
- 1 cup Khoa
- few drops Rose Water
- few strands Saffron strands
- 1/2 teaspoon Cardamom powder
- 1/2 cup Mixed Nuts
Instructions
Step 1
Wash, peel, and grate the carrots using a food processor or electric vegetable chopper.
Step 2
Heat desi ghee in a thick-bottomed skillet and sauté the grated carrots.
Step 3
Add full cream milk, sliced dates, and cardamom powder to the carrots. Cook on low heat until the milk is absorbed and carrots are cooked.
Step 4
To the mixture, add saffron strands dissolved in milk.
Step 5
Add jaggery powder (or brown sugar) and khoa to the carrots and mix gently.
Step 6
Let it cool down, then add a few drops of rose water or rose essence for fragrance.
