The "Red Velvet Carrot halwa" is a variation of very popular "Gajar ka halwa" a famous sweet from India that is relished in winters. Carrot halwa is an excellent source of vitamin A and calcium.   • 2 cup Carrots
  • 5 Dates(optional)
  • 5 teaspoons Desi ghee
  • 3 cup Full cream milk
  • 3/4 cup Jaggery powder(optional)
  • 1 cup Khoa
  • few drops Rose Water
  • few strands Saffron strands
  • 1/2 teaspoon Cardamom powder
  • 1/2 cup Mixed Nuts

Instructions

Step 1

Wash, peel, and grate the carrots using a food processor or electric vegetable chopper.

Heat desi ghee in a thick-bottomed skillet and sauté the grated carrots.

15-20 minutes

Add full cream milk, sliced dates, and cardamom powder to the carrots. Cook on low heat until the milk is absorbed and carrots are cooked.

To the mixture, add saffron strands dissolved in milk.

Add jaggery powder (or brown sugar) and khoa to the carrots and mix gently.

Let it cool down, then add a few drops of rose water or rose essence for fragrance.
