- 1 kilogram Karelay (Bitter Gourd)
- 1/2 kilogram Minced meat (Qeema)
- 1 Onion, chopped
- 1 teaspoon Garlic paste
- 1 teaspoon Ginger paste
- 1 Tomato, chopped
- 3 Green Chillies, chopped
- a few Fresh Coriander leaves
- 1/2 cup Oil (for Qeema cooking)
- 2 cup Oil (for frying)
- 2 tablespoon Bitter Gourd shavings
- to taste Salt
- 2 teaspoon Red Chilli Cutter
- 1 teaspoon Coriander powder
- 1/4 teaspoon Haldi powder
- 1/2 teaspoon Cumin powder
- 1/2 teaspoon Garam Masala powder
Instructions
Step 1
Thoroughly wash the bitter gourds. Shave them all around, then make a cut along their length. Retain the shavings to be cooked with the qeema. Apply a little salt to the bitter gourds and set them aside.
Step 2
In a pan, heat the oil designated for qeema cooking. Fry the chopped onion until golden brown. Add the chopped tomato, ginger paste, garlic paste, bitter gourd shavings, minced meat (qeema), and all the specified spices. Fry for 2-3 minutes. Add 1 cup of water and cook on medium flame until the qeema is tender. Sprinkle green chillies and fresh coriander leaves, then simmer for 10 minutes. If any water remains, evaporate it on high flame. Let the cooked qeema cool completely.
Step 3
Fill each prepared bitter gourd with the cooled qeema mixture. Secure the stuffed bitter gourds by wrapping cooking thread around them. Heat the oil designated for frying in a separate pan and fry the stuffed bitter gourds until they are golden brown and tender.
Step 4
The delicious Bharwan Karelay are ready. Serve hot with Roti.
