Ground Turkey Stuffed Peppers

I actually like to use a 1/2 and 1/2 blend of turkey and ground beef whenever any recipe calls for ground beef. It's just a little bit healthier and it produces a really yummy and less greasy tasting flavor if you know what I mean. Feel free to go all-turkey if you want. So, here's the recipe I use. It came from my mother-in-law who makes these (and so does her mother) and they are soooo good. She doesn't measure anything though so she just told me the ingredients. I haven't gotten it to taste exactly like hers but here's as close as it gets...

  • 1 heaping tablespoons sugar
  • 1/4 cup grated parmesan cheese
  • 1 8oz can diced tomatoes
  • 1 8oz can tomato sauce
  • 1 8oz can tomato soup
  • 4 bell peppers
  • 1 tablespoons minced garlic
  • 1 teaspoons black pepper
  • 2 tablespoons dried parsley
  • 1 tablespoons Worcestershire sauce
  • 1 onion
  • 2 eggs
  • 1/2 pounds ground beef
  • 1/2 pounds ground turkey
  • 1/2 cup uncooked rice
  • grated parmesan cheese(optional)
  • parsley(optional)

Instructions

Step 1

Cook the rice according to package directions.

In a mixing bowl, knead the cooked rice together with the 1/4 cup grated parmesan cheese, diced onion, eggs, ground beef, and ground turkey to form the filling.

Cut the tops off the bell peppers.

Fill each bell pepper with the prepared filling.

Place the filled peppers in a slow cooker or a large stove-top pot.

In a separate bowl (or after cleaning the first one), mix together the sauce ingredients: sugar, diced tomatoes, tomato sauce, tomato soup, minced garlic, black pepper, dried parsley, and Worcestershire sauce.

Top each stuffed pepper with some of the prepared sauce.

Pour the remaining sauce all around the stuffed peppers in the pot.

Cook on medium/low heat for about an hour.

Garnish with additional grated parmesan cheese and a little parsley, if desired.

Serve warm.
