Ingredients

  • 1 cup sesame seeds
  • 2 large egg whites(optional)
  • 1/4 cup dry bread crumbs(optional)
  • 1 cup sunflower seeds
  • 1 teaspoon curry powder
  • 1 cup cooked or canned chickpeas, drained

  • 3 large cloves garlic, minced
  • 2 green onions, finely chopped
  • 1 cup finely chopped white or cremini mushrooms
  • 1 tablespoon vegetable or coconut oil

Instructions

Step 1

about 5 minutes

In a medium skillet, heat oil over medium heat. Add green onions and mushrooms and cook, stirring often, until soft. Remove from heat.

2

Step 2

In a food processor or blender, combine garlic, chickpeas, and reserved chickpea liquid, then process until smooth. Transfer this mixture to a large bowl and combine with the cooked mushroom mixture. In the same food processor or blender, process sunflower seeds to make a coarse meal. Add the sunflower meal and curry powder to the chickpea mixture and mix well. Stir in the egg whites or bread crumbs. The mixture will be soft.

Step 3

On a large baking sheet, spread out sesame seeds to create 8 beds for patties. Shape the burger mixture into 8 patties and place them on the sesame seeds. Flip the patties to generously coat both sides.

Step 4

3 to 4 minutes on each side

Grill patties on a well-oiled grill or broil 4 inches from the heat source, 3 to 4 minutes on each side until browned. Serve immediately.
