  • 1 tablespoon oil
  • 1 onion
  • 1 zucchini
  • 1 red or green bell pepper
  • 1 tomato
  • 1 avocado
  • 1 lime
  • salt & pepper(optional)
  • chili pepper powder(optional)
  • cilantro(optional)
  • flour or corn tortillas

Instructions

Step 1

Wash and slice all vegetables.

2 minutes or until tender

In a frying pan, sauté the sliced onion, zucchini, and bell pepper in oil.

Add salt, pepper, and chili powder to the sautéed vegetables and mix.

On a large plate, place a tortilla.

Top the tortilla with cooked vegetables, 2 slices of tomato, 2 slices of avocado, and a squeeze of lime juice.

Wrap the tortilla to form a burrito.

Garnish with a sprig of cilantro.
