- Dash dash cayenne pepper
- 1 tablespoon butter
- 1 teaspoon minced shallots
- 1 teaspoon minced parsley
- 1 cup dry white wine
- 3 pounds mussels

Wash the mussels thoroughly, discarding any broken shells or dead mussels.

Place mussels in a large pot or steamer. Add wine, parsley, and shallots.

Steam for approximately 5 minutes or until shells open.

Drain the mussels, reserve the mussel liquor, and reduce it to 3/4 cup.

Remove the top shell from each mussel.

Add butter and pepper to the reduced broth and pour over the mussels.
