- 1 cauliflower cut into small florets
- 4 potatoes cut in cubes
- 2 onions chopped
- 2 tomatoes chopped
- 6 green chillies sliced
- 2 inch ginger chopped
- 2 tablespoons red chilli powder
- 1 tablespoon turmeric powder
- 1 tablespoon cumin powder
- 1 tablespoon mustard powder
- 1 tablespoon garam masala
- 1 bay leaf
- cloves
- oil
- salt(optional)
- chopped coriander(optional)
Instructions
Step 1
Heat oil in a pan.
Step 2
Stir fry the cauliflower florets and cubed potatoes in oil until half cooked. Remove them from the pan and set aside.
Step 3
In a separate pan, heat oil.
Step 4
Add bay leaf, cloves, and sliced onions. Sauté for 10 minutes, then add chopped ginger.
Step 5
Add chillies and tomatoes. Mix well and cook for 5 minutes.
Step 6
In a small bowl, mix turmeric powder, chilli powder, garam masala, cumin powder, and mustard powder with water to form a paste.
Step 7
Add this spice mixture to the pan and mix everything well.
Step 8
Finally, add the half-cooked cauliflower florets and cubed potatoes to the masala. Add some water and let it cook for another 10 minutes.
Step 9
Garnish with chopped coriander leaves and serve hot, ideally with phulkas.
