Healthy Baked Pumpkin Pie Oatmeal
So I've defiantly been on an "oatmeal kick" lately. I LOVE the stuff! I eat it every morning and I love that I am able to do so much with it and still keep it healthy and 98% clean! I have to say this one by far is my favorite! I've made it twice this week already and it's only Wednesday. I woke up craving it this morning. Thank goodness I have some in the frig for breakfast :) It's so good and really taste like something so bad for you but it's not! - 0.5 cup dry <a href="/VTBK5S3R">oats </a>(NOT the instant kind)
- 1 cup <a href="/PXTR53Z5">water</a>
- 3 tablespoon liquid <a href="/MNYLPMP5">egg whites</a>
- 0.125 teaspoon <a href="/J2KTPXCW">baking powder</a>
- 0.25 teaspoon <a href="/4MFRDDZL">pumpkin pie spice </a>(<a href="/RSMPYXXF">apple pie spice </a>or <a href="/LR6J3M3S">cinnamon </a>work too)
- 1 tablespoon sugar-free <a href="/RF3SQ8YM">vanilla </a><a href="/5FDW4PVS">coffee </a>flavoring (I use Archer Farms from Target OR Torani)*
- 2 teaspoon <a href="/GHZ654L7">brown sugar </a><a href="/DWW5KR54">splenda*</a>
- 3 tablespoon can <a href="/25JCPGMK">pumpkin</a>
Instructions
Step 1
<a href="/7S3QCKWK">Mix </a>all of the above together in a small oven-safe container and <a href="/RNT367Z2">bake </a>at 350º for 35 minutes.
Step 2
When it comes out of the oven the pumpkin has somewhat risen to the <a href="/R34ZSY3M">top.</a> You <a href="/TPWNYF5L">can </a>eat it like this (see picture). I <a href="/R34ZSY3M">topped </a>it with a dollop of fat-free <a href="/GZFHJC5K">cool </a><a href="/TCTHBPYH">whip </a>just to see how it <a href="/WDCS6JL5">tasted!</a> OR you <a href="/TPWNYF5L">can </a><a href="/7S3QCKWK">mix </a>it all up. (see picture) Oh goodness, super yummy!
Step 3
*A note on sweetness: I'm use to eating my oatmeal plain! I've come to like it that way, so all of my <a href="/RNT367Z2">baked </a>oatmeals are not overpowering with sweetness! They may or may not be sweet enough for you. The best part about it, is you <a href="/TPWNYF5L">can </a>adjust the sweetness to your liking. I'd just add a lil at time until it's as sweet as you like it. And of course you <a href="/TPWNYF5L">can </a>use all natural <a href="/5BP3F4HZ">sweeteners </a>like honey or raw sugar instead. In both cases remember that the nutritional values may change anytime you make a change!
