The Gourmet Butcher's Baked Haddock

Ingredients

haddock filet (one per person)
mayonnaise (the real stuff please)

Preparation

Preheat the oven to 400 degrees F.

Take a fresh haddock filet and pat it dry with paper towels. Lay it out on foil or waxed paper.

Spreak a quarter inch of mayonnaise (the real stuff please) on the top side only. Coat the top side only with unflavored breadcrumbs.

Drop a few tabs of butter into a baking pan. Place the pan into the oven until the butter melts. Flip the breaded side of the haddock onto the pan.

Quickly apply mayo and breadcrumbs to the other side.

Then place everything into the oven for about 12 minutes (rule of thumb for fish: 10 minutes for every inch of thickness.)
