Yield: 2 1/2 cups

whole cloves

1

bay leaf

1

stick cinnamon

¼

teaspoon whole allspice

¼

teaspoon celery seeds

¼

teaspoon chili flakes

pounds tomatoes, roughly chopped

1 ½

teaspoons Kosher salt

½

cup white vinegar

1

onion, chopped

1

Anaheim chili, chopped

1

clove garlic, chopped

Step 1

Bundle first six ingredients in cheesecloth.

Step 2

Combine spice bundle with remaining ingredients in a saucepan and cook until onions, chili, and tomatoes are soft, approximately 45 minutes; stir occasionally.

Step 3

Remove from heat and take out spice bundle.

Step 4

Puree in a blender until smooth.

Step 5

Strain through a mesh strainer back into pot.

Step 6

Cook an additional 20-30 minutes over medium heat until thickened.

For a smokey flavored ketchup add smoked paprika to taste. Add more salt, sugar or vinegar to adjust for personal preference. This recipe is based on an article found in the January/February 2009 Saveur magazine (issue 117).
