Ketchup
For a smokey flavored ketchup add smoked paprika to taste. Add more salt, sugar or vinegar to adjust for personal preference. This recipe is based on an article found in the January/February 2009 Saveur magazine (issue 117).

Instructions
Step 1
Bundle first six ingredients in cheesecloth.
Step 2
Combine spice bundle with remaining ingredients in a saucepan and cook until onions, chili, and tomatoes are soft, approximately 45 minutes; <a href="/technique/DRM2WPZ4/stir">stir</a> occasionally.
Step 3
Remove from <a href="/technique/XZFHRHHF/heat">heat</a> and take out spice bundle.
Step 4
<a href="/technique/HGX4TB7D/puree">Puree</a> in a <a href="/technique/S6W4FR7F/blender">blender</a> until smooth.
Step 5
<a href="/technique/KXN5X3J8/strain">Strain</a> through a mesh strainer back into pot.
Step 6
Cook an additional 20-30 minutes over medium <a href="/technique/XZFHRHHF/heat">heat</a> until <a href="/technique/LXP6HLBF/thickened">thickened</a>.
