teaspoon whole allspice |

teaspoon celery seeds |

teaspoon chili flakes |

pounds tomatoes, roughly chopped |

teaspoons Kosher salt |

cup white vinegar |

onion, chopped |

Anaheim chili, chopped |

clove garlic, chopped |

Step 1 |
Bundle first six ingredients in cheesecloth. |
Step 2 |
Combine spice bundle with remaining ingredients in a saucepan and cook until onions, chili, and tomatoes are soft, approximately 45 minutes; stir occasionally. |
Step 3 |
Remove from heat and take out spice bundle. |
Step 4 |

Step 5 |
Strain through a mesh strainer back into pot. |
Step 6 |
Cook an additional 20-30 minutes over medium heat until thickened. |

For a smokey flavored ketchup add smoked paprika to taste. Add more salt, sugar or vinegar to adjust for personal preference. This recipe is based on an article found in the January/February 2009 Saveur magazine (issue 117).
