- 1 handful fresh basil, chopped
- shredded mozzarella cheese
- 5 long sweet Italian peppers(optional)
- 2 cups Italian style bread crumbs
- 7 cloves garlic, chopped
- 1 cup feta cheese, crumbled
- 10 ounces chopped frozen spinach
- olive oil
- 1/4 cup grated Romano cheese
Instructions
Step 1
Heat a griddle. Place the whole peppers on the griddle to grill until slightly charred. Remove from the griddle and let cool.
Step 2
Heat a medium frying pan with a drizzle of olive oil. Add the frozen spinach and sauté.
Step 3
While the spinach is sautéing, heat a large frying pan with a drizzle of olive oil. Sauté the chopped garlic. Add the bread crumbs and a little more olive oil, then toss. Stir in the sautéed spinach and grated Romano cheese, tossing well. If needed, add more olive oil. Add the crumbled feta cheese and toss. Remove the pan from the heat and set aside.

Preheat the oven to 350 degrees F (175 C).

Carefully slice the grilled peppers lengthwise and arrange them in a baking pan. Fill each pepper half with the prepared stuffing mixture. Sprinkle grated mozzarella cheese on top, then grate a little more Romano cheese over that. Drizzle a little more olive oil over the stuffed peppers.

Bake for 20-25 minutes, or until the cheese is slightly golden and bubbly.
