Meatless Monday: Grilled Vegetable and Pineapple Salad

Grilled vegetable and pineapple salad from Living the Gourmet is a healthy way to enjoy summer's best flavors.  A variety of seasonal vegetables are tossed in olive oil, salt, and pepper and left to char and tenderize on the grill.  The vegetables are tossed with red pepper flakes and fresh basil before being served on a bed of lettuce.  If you do not have access to a grill, you can make this recipe in a skillet.

Grilled Vegetable and Pineapple


1 head of Romaine lettuce
1 eggplant – peeled and quartered into bite size pieces
1 cup of fresh pineapple chunks
1 sweet onion – sliced
3 cloves garlic – chopped
½ cup fresh basil – chopped
1 bell pepper – sliced
¼ tsp. salt
¼ tsp. red pepper flakes
¼ tsp. black pepper
2 tablespoons olive oil
Fresh croutons – for garnish
