Vegetable Pizza and Other Meals Under 500 Calories

Cooking can be difficult when your counting calories.  These dinner recipes are less than 500 calories each so I am forecasting some care-free eating in the near future.  When you are looking to try something new like black bean tostadas are sticking to old favorites such as chicken parmesan, there is a meal for everyone.

Baked Chicken Parmesan

When chicken parmesan is only 251 calories per serving, you can afford to eat this meal any night of the week.  There are few tricks that help keep the calorie count low including baking the chicken instead of frying and using a minimal amount of fat.  Serve with a garden salad and whole wheat pasta.

Black Bean Tostadas

Black bean tostadas with cilantro cream sauce is an easy south of the border recipe that the family will love. Canned black beans are seasoned with cumin and chili powder and pureed in a food processor (you can also do this by hand using a fork).  The bean mixture is then spread on a crunchy tortilla and topped with lettuce, tomato, avocado, and of course, that dreamy cilantro sauce.

Lasagna is a household favorite and this low calorie version allows you to enjoy this comfort food dish without the guilt.  One serving (one roll) is less than 300 calories which is significantly less than a slice of traditional lasagna.  You can prepare this meal ahead of time and bake right before serving.

Chicken Enchiladas

Skinny enchiladas have all the the flavor and half the fat of the traditional recipe.  Not only is this meal delicious but it is super easy to put together any night of the week.  If you like to do meal prep, you can make a double batch of the homemade enchilada sauce earlier in the week to save yourself a step when cooking this meal.

Cauliflower pizza crust is the answer to being able to eat pizza every day. This low calorie alternative to a wheat crust is only 64 calories per serving.  Load on your favorite vegetable toppings including bell peppers, olives, onions, tomatoes, and cheese.
