
We have a couple that lives just a few miles away from our place. Over the past few years, we have become close, talking about growing things in the ground and family farm topics. They put up with my *outside the box* thinking, and I pretend not to notice when they let my kids run feral during our visits.
They have a ton of wonderful things growing there, and ask us to come pick apricots during the season. The thing is, they have apricots no bigger than a walnut. Actually, I have never seen a walnut that small.
We pick 5 gallon buckets of these tiny beauties and can them, dry them and make preserves. Here is one of our favorite ways to use them, Apricot Jam Squares. Why we have gotten away from this old fashioned type dessert, I cant understand. It is easy to master, and can be switched up with whatever type preserves you have on hand. Enjoy!
