Book Tripe
About
Section of one of the four stomachs of the cow. Book tripe has "leaves" of tissue attached to a foundation layer, similar to a printed book. A bit more tough than Honey comb tripe, book tripe is usually sliced thinly and combined with a rich sauce. Especially popular in Asian cuisines.
