What better way to start the morning than with a hearty bowl of steel cut oatmeal? Especially if you’re heading up to the mountain for a day of skiing ...

tablespoon butter |

cup steel cut oats |

cups boiling water |

cup whole milk |
½ |
cup plus 1 tablespoon low-fat buttermilk |

tablespoon brown sugar |

teaspoon cinnamon |
Step 1 |
In a large saucepan, melt butter and add the oats. |

Step 3 |
Add the boiling water and reduce heat to a simmer. Keep at a low simmer for 25 minutes, without stirring. |
Step 4 |
Combine the milk and half of the buttermilk with the oatmeal. |
Step 5 |
Gently stir to combine and cook for an additional 10 minutes. |
Step 6 |
Spoon into a serving bowl and top with remaining buttermilk, brown sugar, and cinnamon. |
This recipe was adapted from Alton Brown's version. Optional toppings include diced apple, raisins and orange zest.
