Cornmeal Fried Green Tomatoes

Ingredients

3 medium green tomatoes (beefsteak types work well)
1 1/2 cups corn meal
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/4 cup water

Preparation

Wash and slice green tomatoes into 1/4 inch slices

Sprinkle lightly with salt and let sit for 15 minutes on absorbent towels (optional, but allows the release of excess moisture for better sticking power for the coating)

Combine cornmeal, flour, salt, garlic powder and pepper in a small bowl

In another bowl, beat eggs and water

Dip tomato slices in egg mixture, then cornmeal mixture

Fry in hot oil until golden brown on each side 5 minutes on first side, 3 minutes on second.
