Chinese Spicy Eggplant With Ground Pork
Ingredients
2 teaspoons
vegetable oil
1/2 pound
ground pork
1 pound
dices
eggplant
2 teaspoons
soy sauce
3 teaspoons
black bean
paste with
chili
1 teaspoon
rice vinegar
1/2 teaspoon
sugar
1/2 cup
soup stock
2 teaspoons
sesame oil
chopped
green onions
for garnish
Preparation
1
Heat
wok
and add 2 tablespoons oil
2
Add pork and
stir fry
for 2 minutes

Add eggplant and all remaining ingredients except sesame oil
4
Cover
wok,
bring to
boil
and
simmer
until eggplant is tender
5
Transfer to
serving
dish
and sprinkle chopped green onions on
top
