Vegetarian Loaf

Ingredients

3 cups cooked chickpeas
1/2 cup each celery and carrots, chopped
1 onion, chopped
1 cup whole wheat bread crumbs
1 tablespoon soy sauce
2 tablespoons all-purpose flour
1 cup chopped nuts, unsalted
1 teaspoon dried sage
2 tablespoons salad oil
2 tablespoons chopped parsley
2 eggs (beaten) or equivalent egg replacer
salt, to taste

Preparation

Saute onions, carrot and celery until soft.

Mash chickpeas in large bowl. Add remaining ingredients. Place in oiled loaf pan. Bake at 375 degrees F. for 30 minutes.
