Mandarin Orange Ice Cream

Ingredients

3 cans mandarin orange segments, drained
1 cup sugar

Preparation

Puree mandarin oranges, strain juice

Measure juice and add e nough orange juice to make 2 cups total of liquid.

Add sugar and stir to dissolve

Whisk 1 cup of cream until soft peaks form

Fold in orange juice

Pour mixture into plastic bowl

Cover and freeze for 2 hours or until soft but frozen

Whisk mixture until smooth

Return to freezer for 3 hours
