Pumpkins are ready! My neighborhood pumpkin and squash farm is selling a ton of them right down the road. Pumpkin is a wonderful food to have in the pantry because it so versatile.

The pumpkin that you make you carve for the Halloween, are not the same type that you eat. They are edible, but actual pie pumpkins have much more flavor and better texture. Buy a few to keep in a cool place, if you have the room. They will keep for weeks. I also cook mine and freeze the fresh pumpkin in 2 cup measures for year round use.
