Looking for a low fat, healthy option for lunch or dinner? This easy rice bowl takes just minutes to make, is packed with protein and other good-for-you ingredients. Best of all, it packs a flavorful punch! Not a fan of tofu, use precooked chicken breast or skip it altogether.
Thai Style Tofu Rice Bowl with Greens
1 cup cooked brown rice
1/2 cup cooked quinoa
1-2 tablespoons Thai peanut sauce (we used store-bought)
A large handful of baby spinach (or a combination of baby spinach, kale and Swiss chard as we used)
Baked tofu (Savory or Thai flavored), diced
Mix all in a bowl and enjoy!
