Chocolate Cupcakes

Ingredients

100 grams dark chocolate
100 grams butter,softened
150 grams sugar
75 grams flour,sifted
100 grams dark chocolate
5 tablespoons unsalted butter
1 tablespoon milk
2 tablespoons icing sugar

Preparation

Melt chocolate and butter in a double boiler .zccz

In a mixing bowl with ballon whisk attachment,beat the eggs and sugar together on medium speed until the ribbon stage.

Add the melted chocolate and butter ,mix well.

Using a spatula ,fold in the sifted flour.Place paper cups into baking moulds.

Pour ¾ full and bake for 13mins at 160C.

Remove from oven ,set aside to cool completely before decorating with chocolate cream.

Cream: Beat butter and sugar until fluffy.

Add in milk and melted chocolate and combine until smooth. Decorate using a piping bag on the cup cakes.

You can make design with melted chocolate and freeze them in the fridge overnight.

The designs then can be taken out slowly with a sharp knife and be decorated on the chocolate cream.

This recipe of cupcake is adapted from Jean Francois Arnaud ,a MOF pastry masterchef based in France and a sugarwork arist.The cupcakes were bouncy ,soft to the touch and I will not hesitate to make it again and again.
