Mock Tender Steak

About

Mock Tender Steak is a very tough cut of beef that starts out as a cone-shaped cut from the top blade of the chuck primal. It is a less expensive cut of beef that benefits from marinating and long, slow cooking.

High in connective tissue, mock tender steak benefits from long (12-24 hour) marinating in somewhat acidic marinades. Long, slow braising in wine or other acidic liquid also helps to break up the connective tissue.

To serve, cut in thin strips against the grain.

Properly cooked, mock tender steak can be both flavorful and not too chewy.
