  • Olive oil
  • Lamb chops
  • 2 cloves Garlic, finely chopped
  • 1 tablespoons Ancho chili powder
  • 2 tablespoons Balsamic vinegar
  • 3 tablespoons Dijon mustard
  • 1 cups Dark molasses

Step 1

Combine the finely chopped garlic, ancho chili powder, balsamic vinegar, Dijon mustard, and dark molasses in a mixing bowl to create the glaze. Mix thoroughly until all ingredients are well combined. This glaze can be prepared in advance and refrigerated.

Brush the lamb chops with olive oil and season them generously with salt and pepper. Place the seasoned chops on a preheated grill. Grill for 3 to 4 minutes on one side. Turn the chops over, baste with the prepared mustard-molasses glaze, and cook for another 3 to 4 minutes. Turn again, brush with more glaze, and cook for an additional 3 minutes. For the final turn, apply the remaining glaze and cook for 2 more minutes. Adjust cooking times based on your grill and desired doneness.
