There really is nothing like a good baked chicken. This is a nice change from the traditional way to serve carrots as a side dish. These potato wedges are so good, they make any meal a little more fun. Remember, adjust the ingredients to the size chicken and amount of carrots and potato's you will be serving and to you liking.   • 1 whole chicken
  • 1 bunch Italian parsley, chopped
  • 4 cloves garlic, chopped
  • 1/2 cup grated Romano cheese
  • 1 lemon lemon juice
  • 1/4 teaspoons salt
  • 1/4 teaspoons black pepper
  • olive oil
  • 1/4 teaspoons salt
  • 1/4 teaspoons black pepper

Instructions

Step 1

Preheat oven to 350 degrees F (175 C).

Clean the whole chicken inside and out, then pat dry.

In a small bowl, combine salt, black pepper, and garlic powder for the chicken rub. Set aside.

In another small bowl, combine chopped Italian parsley, chopped garlic, grated Romano cheese, lemon juice, salt, and black pepper. Drizzle a little olive oil over the mixture, then gently lift the skin of the chicken and stuff this mixture under the skin.

Rub the chicken skin all over with the prepared rub.

Place the chicken in a baking pan and bake for 55 to 60 minutes, or until cooked through.

Preheat oven to 350 degrees F (175 C).

In a small bowl, combine brown sugar, vinegar, salt, chili powder, black pepper, garlic powder, and olive oil to form a paste.

Smooth the paste onto each cleaned carrot and arrange them on a baking pan.

Bake the carrots for 35 to 40 minutes, or until tender.
