Healthy (and Delicious) Banana Muffins!


2 cups whole wheat flour
1 tsp baking soda
1/4 tsp salt
1 cup unsweetened apple sauce
1/2 cup honey
1 egg beaten
3 ripe bananas mashed
1 Tbsp flax seed meal combined with 3 Tbsp water
1/4 cup chopped walnuts optional


Preheat your oven to 350° F and place muffin liners in two standard muffin tins. Combine the flax seed meal with the water in a small bowl. Stir and place in the fridge for 15 minutes.
In a large bowl, whisk together flour, baking soda, and salt. In a smaller bowl, combine applesauce, honey, egg, flax seed mixture and bananas.
Add liquid ingredients all at once to dry ingredients and mix gently. Do not over mix, only until just moistened. Fold in walnuts if desired. Transfer to pans and bake.
Standard muffins 16 minutes. Loaves will take about an hour. Mini muffins 8 minutes.
When a toothpick inserted in the middle comes out clean, remove from the oven and allow to cool about 5 minutes in the pan. Transfer to wire rack for complete cooling. Store in the fridge or freezer (if they don't disappear first!) Enjoy!
