Tomato Jams

Ingredients

2 1/2 cups Tomatoes , 3 Large plum tomatoes
3 cup sugar

Preparation

Heat the pan and add sugar. Add very little water and keep stirring until the sugar dissolves. Once the sugar is dissolved, add the finely diced tomatoes.

Keep stirring until the tomatoes are cooked. It will take around 45 minutes for them to cook and reach the perfect jam consistency.

Make sure you do this in a heavy bottomed pan or non stick. Keep stirring it occasionally so that it does not get burnt in the bottom.

Clarified butter/ghee can add flavor but keeping it simple also gives a good taste and you can cut off the extra little fat.
