- 2 cans black beans, drained & rinsed (15.5 ounce)
- 1/2 small red onion, diced
- 1/2 green bell pepper, diced
- 3 cloves garlic, minced
- 1 jalapeno pepper, seeds & veins removed; finely diced
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 tablespoon ground coriander
- 1 teaspoon hot sauce
- 1 teaspoon Kosher salt
- 1/2 teaspoon freshly cracked black pepper
- 1/4 teaspoon cayenne pepper
- 2 eggs, beaten
- 2 cups original Fritos
Instructions
Step 1
In a large mixing bowl, mash the black beans with a potato masher. Add red onion, green pepper, garlic, jalapeno pepper, cilantro, cumin, chili powder, coriander, hot sauce, salt, and pepper. Mix to combine with your hands.
Step 2
In a food processor, add Fritos and pulse until they form a fine meal.
Step 3
Add the pulsed Fritos and beaten eggs to the black bean mixture. Mix thoroughly to combine with your hands.
Step 4
Form the mixture into 8 burgers, using approximately 2 tablespoons for each, and flatten slightly.
Step 5
Pre-heat grill to 350°F to 400°F. Place a sheet of tin foil over the grill grate, add the burgers, and cook for 5 minutes per side.
Step 6
Serve the burgers open face with Grilled Corn Salsa and Mango Salsa on the side.
