Yankee Pot Roast

Ingredients

2 cups tomato sauce
4 pounds boneless pot roast
1 cup chopped onion
1 lg. clove minced garlic
2 Tbs Flour
1/4 Cup Water
Salt and Pepper to taste

Preparation

In large pan brown roast (use shortening if needed). Pour off fat. Add tomato, onion, and garlic. Cover and cook over low heat about 3 hours or until tender. Stir occasionally. Skim off fat.

Remove meat and set aside. Combine flour with water and add to juices from cooking. Bring to a boil to thicken.

Slice roast and arrange on a platter. Pour gravy over top and serve.
