Thai Peanut Noodles
8 ounces thin spaghetti
1/2 cup unsalted peanuts, plus more for garnish
3 tablespoons soy sauce
2 tablespoons lemon juice
1 tablespoon honey
3 tablespoons water
1 tablespoon vegetable oil
2 cloves garlic, chopped
1/2 cup thinly sliced onion
1 cup snow peas, cut into 1" lengths
3 cups fresh bean sprouts
1/4 cup thinly sliced green onions (green part only)
Cook spaghetti and drain. Chop peanuts (a blender works well for this). Combine soy sauce, lemon juice, honey and water. Heat oil in pan over medium heat. Add garlic and onions. Stir about 2 minutes, then add snow peas, bean sprouts and 1/2 the soy mixture. Cook about 3 minutes, stirring.
Add remaining soy mixture along with more chopped peanuts, green onions and drained pasta. Toss well and serve.
