Thaw puff pastry sheets for approximately 20 minutes. Preheat oven to 375 degrees. Spray cookie sheet with Pam. Clean, peel and cut vegetables. Cut broccoli into small flowerettes, carrots into slices and celery into slices. Cook carrots and celery in chicken broth for about 15 to 20 minutes. Lay out pastry sheets.
If you have a tart master or crimping tool use them, if not use fingers to crimp pastry sheets. Place on cookie sheets. Cook for 25 minutes or until golden brown.
