1/2 cup honey granola (or whatever granola you love)
1 stick plus 2 Tbsp butter, softened

1
Oven at 350 degrees.
2
Toss together the diced nectarines, regular sugar, 2 Tbsp flour and a squeeze of lemon juice in a bowl.

Place the mixture into a baking dish.
4
Now for the crisp topping. In a bowl mix together the oats, brown sugar, granola, 1/2 cup flour, and cinnamon. Add the mixture to a food processor along with the butter. Give it just a few very quick pulses to start to work the butter into the mixture then finish working it in with your hands or the back of a spoon.
5
Pour the crisp over the peaches and bake for approx 25-30 minutes, until bubbling and the top is golden.

About

Who doesn't love summer fruit right?!?! My house is always stocked with fruit, I regularly refer to my boys as fruit monsters because man can they devour it! There are of course those times that maybe I pick up too much at one time and end up with a lot of very ripe fruit. Now, I absolutely hate throwing food away so I of course needed to figure out what to do with my very ripe 6 nectarines! Keeping it simple I figured why not make a crisp!

I have to say it came out pretty darn good and the only thing missing was the vanilla ice cream my hubby forgot to pick up, but i'll forgive him. This a super simple dessert that can be thrown together really quickly. How fantastic to be able to say "Yup I made dinner and a wonderful little dessert"!
