Cranberry Kumquat Relish

Ingredients

24 ounces fresh cranberries
1/2 cup brown sugar (packed)
10 kumquats, seeded and diced
cup pine nuts, lightly toasted

Preparation

Place the cranberries in a food processor fitted witht he steel blade; pulses just until very coarsely chopped. Be careful not to overprocess the cranberries. Transfer to a mixing bowl.

Seed both the lemon and orange and cut into small chunks.

Process in the food processor until finely diced.

Add to the cranberries.

Add both sugars and stir until thoroughly mixed.

Return about one-third of the cranberry mixture to the food processor and process until finely minced.

Stir into the remaining mixture in the bowl.

Stir in the kumquats, pine nuts, and liqueur. Refrigerate the relish several hours to allow the flavors to mellow and blend.
