Easy No Bake Whipped Cheesecake

Ingredients

2 (8 oz) packages cream cheese
1/2 can sweetened condensed milk
1 cup whipping cream
1/2 cup sugar
Crust
1 1/2 cups graham cracker crumbs
1/3 cup sugar
1/2 teaspoon cinnamon
6 tablespoons butter (melted)
9 inch glass pie pan

Preparation

Combine graham cracker crumbs, 1/3 cup sugar, cinnamon, and butter.

Press into bottom and sides of a glass pie pan.

Bake at 375 degrees for 7 minutes.

Remove and let cool on cooling rack.

With hand mixer, blend cream cheese, one block at a time, in medium sized mixing bowl until cream cheese is smooth.

Add condensed milk and blend on medium high for about two minutes or until no lumps are visible. Set aside.

In small mixing bowl, whip whipping cream and 1/2 cup sugar until stiff peaks form.

Fold whipping cream into cream cheese mixture.

Pour into prepared crust.

Chill at least two hours before serving.

Top with fruit toppings off your choice.

About

This is nowhere near as good as the NYC cheesecake on my site, but it is easy and a little lighter if you need something quickly. You can also add pie filling and a 1/2 package unflavored gelatin (dissolved in 1/4 cup hot water, cooled) to allow it to set a little better. Good luck!
