Florentine Cookies

Ingredients

2/3 cup Butter
2 cups Quick oats, uncooked
1 cup Sugar
2/3 cup Flour
1/4 cup Corn syrup
1/4 cup Milk
1 teaspoon Vanilla
1/4 teaspoon Salt

Preparation

Preheat oven to 375F

Melt butter stir in oats, sugar, flour, corn syrup, milk, vanilla, and salt. mix well. Drop by measuring teaspoonfuls, about 3 inches apart, onto foil-lined cookie sheets. Spread thin with rubber spatula.

Bake 5-7 minutes. Cool on cookie sheets. Peel away from foil.

In Hong Kong we used to have a restaurant we frequented about three times a week (sometimes more) for afternoon coffee and get together. They always served coffee with these cookies (the bottoms dipped in chocolate) and we LOVED them. But never knew the name. Seeing your photo, reading your recipe and I have FINALLY found my most favourite (but long-lost) cookie!!! Thank you SO MUCH for posting this, I can't wait to try them out. :))

NOTE: These can be eaten as is....OR do as I have and melt 2 cups chocolate chips in double broiler, spread on flat underside of one cookie, top with another cookie.
