Pumpkin Halwa For Halloween

Ingredients

2 cups Grated yellow Pumpkin:
1/2 cup Sugar:
1/2 cup Honey:
1 teaspoon Cardamom powder:
10 Cashew nuts: 12
4 tablespoons Ghee (clarified butter):
Saffron: few strings
1 tablespoon Milk to dissolve the saffron:

Preparation

Grate the ripe yellow pumpkin and keep it aside.

Roast the cashews in ghee until it becomes golden brown. Drain and reserve.

In a pan, heat 1 tbsp ghee, add the grated pumpkin to it and stir well in low flame till the raw flavor is gone.

In a separate pan add 2tbsp ghee and add the sugar and honey. Add the grated pumpkin and notice the change in color. Pumpkin will be caramelized slowly.

Add the saffron dissolve in little milk and mix well. Continue cooking on slow heat till the pumpkin becomes tender.

Add the cardamom powder, mix well and take off from the heat.

Garnish with roasted cashews and raisins.

Serve hot the pumpkin halwa.
